Ingredients

  • 1 kg Fresh octopus
  • 2 liters Water
  • 1 tbsp Salt
  • 2 pieces Bay leaf
  • 3 pieces Garlic cloves
  • 4 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 2 tbsp Red wine vinegar
  • 2 tbsp Fresh parsley, chopped
  • 1 tbsp Fresh oregano, chopped
  • 0.5 tsp Chili flakes
  • 0.5 tsp Black pepper

Directions

Step 1

Clean the octopus thoroughly under cold running water, removing the beak and any visible impurities. You can also ask your fishmonger to do this for you.

Step 2

In a large pot, bring 2 liters of water to a boil and add the salt, bay leaves, and one garlic clove (crushed).

Step 3

Once the water is boiling, reduce it to a simmer and add the cleaned octopus. Cover and cook for 45-60 minutes, or until the octopus is tender and easily pierced with a fork.

Step 4

While the octopus cooks, prepare the marinade by whisking together the olive oil, lemon juice, red wine vinegar, chopped parsley, oregano, chili flakes, black pepper, and the remaining garlic (finely minced) in a large mixing bowl.

Step 5

Once the octopus is tender, remove it from the pot, rinse briefly under cold water to cool, and pat dry with paper towels.

Step 6

Cut the octopus into smaller portions (such as the tentacles or bite-sized pieces) and submerge them in the prepared marinade. Mix well to ensure all pieces are coated.

Step 7

Cover and refrigerate the marinated octopus for at least 2 hours, or preferably overnight, to allow the flavors to develop.

Step 8

Before serving, bring the marinated octopus to room temperature and transfer to a serving platter. Garnish with additional fresh parsley or a drizzle of olive oil if desired. Serve with crusty bread, salad, or as part of a seafood platter.
