  • 1.5 cups cooked pinto beans
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 medium tomato, diced
  • 1 tablespoon lime juice
  • 1 cup vegan cheese shreds
  • 4 large flour tortillas
  • 0.25 cup fresh cilantro, chopped
  • 0.5 cup salsa, for serving
  • 1 avocado, sliced

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for another minute until fragrant.

Stir in the black beans, pinto beans, cumin, chili powder, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
