Ingredients

  • 12 oz smoked sausage
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 medium zucchini
  • 1 medium red onion
  • 12 oz baby potatoes
  • 2 tbsp olive oil
  • 3 cloves garlic cloves
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley (for garnish)

Directions

Step 1

Wash and prepare the vegetables: dice the red and yellow bell peppers into bite-sized pieces, slice the zucchini into rounds, cut the red onion into wedges, and halve the baby potatoes.

Step 2

Cut the smoked sausage into 1/2-inch thick slices.

Step 3

Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Step 4

Add the smoked sausage slices to the skillet and cook for 4-5 minutes, flipping occasionally, until browned. Remove the sausage from the skillet and set aside.

Step 5

Add the remaining 1 tablespoon of olive oil to the skillet. Toss in the baby potatoes and cook for 8-10 minutes, stirring occasionally, until they start to soften and develop a golden crust.
