  • 1 3-4 pound bird whole chicken
  • 4 tablespoons unsalted butter
  • 1 medium-sized lemon
  • 1 whole head garlic
  • 6 sprigs fresh thyme
  • 4 sprigs fresh rosemary
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 3 medium-sized carrots
  • 2 medium-sized celery stalks
  • 1 large yellow onion
  • 1 cup chicken broth

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Remove the giblets from the chicken cavity and pat the chicken dry with paper towels.

Step 3

Season the cavity of the chicken with 1 teaspoon of kosher salt and 1/2 teaspoon of black pepper.

Cut the lemon in half and slice the garlic head crosswise. Stuff the chicken cavity with the lemon halves, garlic, 4 sprigs of thyme, and 2 sprigs of rosemary.
