  • 2 large Eggs
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Soy sauce
  • 2 stalks Green onions
  • 2 cloves Garlic
  • 1 cup Frozen peas and carrots
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by preparing your ingredients: mince the garlic cloves and finely chop the green onions, separating the white parts from the green tops.

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil.

Step 3

Crack the eggs into a bowl, lightly beat them, and pour into the skillet. Scramble the eggs until just cooked through. Remove from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and the white parts of the green onions. Sauté for about 30 seconds until fragrant.
