  • 4 medium Tomatoes

  • 3 tablespoons Olive oil
  • 1 tablespoon Fresh thyme
  • 1 tablespoon Fresh basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Parmesan cheese (optional)
  • 0.25 cup Breadcrumbs

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly grease a 9-inch round or square baking dish with 1 tablespoon of olive oil.

Step 2

Thinly slice the eggplants, tomatoes, and onion evenly into 1/4-inch rounds. Mince the garlic and chop the fresh thyme and basil.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and garlic, and sauté for 5-6 minutes until softened and fragrant. Season lightly with a pinch of salt and pepper.

Step 4

Layer the tian by arranging slices of eggplant, tomato, and sautéed onion in an alternating pattern (like a fanned design) in the prepared baking dish. Repeat until the dish is filled.
