Ingredients

  • 4 cups fresh broccoli florets
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons unsalted butter
  • 1 cup crushed Ritz crackers
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 0.25 cup parmesan cheese (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Lightly grease a 9x13-inch baking dish with nonstick spray or butter and set aside.

Step 3

Bring a large pot of water to a boil. Add the broccoli florets and blanch them for 2-3 minutes until bright green and just tender. Drain and set aside.

Step 4

In a large mixing bowl, combine the cream of mushroom soup, sour cream, 1 1/2 cups of shredded cheddar cheese, onion powder, garlic powder, salt, and black pepper. Stir until well mixed.

Step 5

Add the blanched broccoli to the mixture and stir until all the florets are well coated.

Step 6

Transfer the broccoli mixture to the prepared baking dish and spread it out evenly.

Step 7

In a small microwave-safe bowl, melt the butter. Mix the melted butter with the crushed Ritz crackers to form a crumbly topping.

Step 8

Sprinkle the cracker mixture over the top of the casserole, followed by the remaining 1/2 cup of shredded cheddar cheese. If using, sprinkle the parmesan cheese on top as well.

Step 9

Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

Step 10

Remove the casserole from the oven and let it rest for 5 minutes before serving. Enjoy!
