  • 3 cups cooked chicken or cooked turkey, shredded
  • 12 ounces egg noodles
  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1.5 cups chicken broth
  • 1 cup milk
  • 0.5 cup sour cream
  • 2 cups cheddar cheese, shredded
  • 2 cups frozen peas and carrots, thawed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.75 cup breadcrumbs
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with cooking spray or butter.

Step 2

Cook the egg noodles according to package instructions, then drain and set aside.

In a large skillet, melt the butter over medium heat. Add the diced onion and celery and sauté for 5 minutes, or until softened. Add the minced garlic and cook for another minute.

Sprinkle the flour over the vegetable mixture and stir well to combine. Cook for 1-2 minutes to remove the raw flour taste.
