Place the chicken breasts in a large pot and cover them with water. Bring to a boil, then lower to a simmer and cook for about 15–20 minutes, or until fully cooked. Remove the chicken from the pot, let it cool slightly, and shred it into bite-sized pieces. Reserve 2 cups of the chicken broth from the pot.
In a large skillet, melt the butter over medium heat. Add the diced celery and chopped onion, and cook until softened, about 5–7 minutes.
