  • 2 pieces Chicken breasts
  • 8 cups Chicken broth
  • 6 large Flour tortillas
  • 2 medium, diced Carrots
  • 2 medium, diced Celery stalks
  • 1 medium, diced Onion
  • 2 cloves, minced Garlic
  • 3 tablespoons Unsalted butter
  • 3 tablespoons All-purpose flour
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried parsley
  • 1 tablespoon Vegetable oil

Directions

Step 1

Heat the vegetable oil in a large stockpot or Dutch oven over medium heat. Add the diced onion, celery, and carrots, cooking for 5 minutes until softened.

Add the minced garlic and cook for an additional minute until fragrant.

Push the vegetables to one side of the pot and melt the butter in the cleared space. Stir in the flour and cook for 1 to 2 minutes to create a roux.
