  • 250 grams Banana bread (preferably slightly stale)
  • 50 grams Unsalted butter (softened)
  • 2 pieces Banana (ripe)
  • 300 milliliters Whole milk
  • 200 milliliters Heavy cream
  • 3 pieces Eggs (large)
  • 80 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 50 grams Raisins or sultanas (optional)
  • 1 tablespoon Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease a medium-sized baking dish with butter.

Step 2

Slice the banana bread into approximately 1.5 cm thick slices. Butter one side of each slice generously with the softened butter.

Step 3

Peel and slice the ripe bananas into thin rounds.

Step 4

Arrange a layer of buttered banana bread slices (buttered side up) in the greased baking dish, followed by a layer of banana slices. If using raisins or sultanas, sprinkle some over the layer. Repeat the layers until all ingredients are used, finishing with a top layer of bread.

In a medium-sized mixing bowl, whisk together the eggs, granulated sugar, and vanilla extract until well combined.

In a saucepan over medium heat, warm the milk, heavy cream, and ground cinnamon until just below boiling point (do not let it boil). Remove from heat.

Gradually pour the warm milk mixture into the egg mixture, whisking constantly to create a smooth custard base.
