Ingredients

  • 250 g All-purpose flour
  • 125 g Unsalted butter
  • 3 tbsp Water
  • 1 tsp Salt
  • 1 kg Yellow onions
  • 200 g Bacon
  • 200 g Sour cream
  • 3 large Eggs
  • 1 tsp Caraway seeds
  • 1 tsp Black pepper
  • 0.5 tsp Nutmeg
  • 100 g Cheese (Gruyère or Emmental)

Directions

Step 1

Preheat your oven to 200 degrees Celsius (390 degrees Fahrenheit).

Step 2

In a mixing bowl, combine 250g of flour, 125g of butter, 3 tbsp of water, and 1 tsp of salt. Mix until a dough forms. Wrap in plastic and refrigerate for 30 minutes.

Step 3

While the dough chills, peel and slice 1kg of onions into thin rings. Slice 200g of bacon into pieces.

Step 4

In a large pan, cook the bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pan.

Step 5

Add onions to the pan and sauté over medium-low heat until they become soft and caramelized, about 20 minutes.

Step 6

In a bowl, whisk together 200g of sour cream, 3 large eggs, 1 tsp of caraway seeds, 1 tsp of pepper, and 0.5 tsp of nutmeg.

Step 7

Once the onions are ready, remove from heat and allow to cool slightly. Then, mix them with the bacon and egg mixture.

Step 8

Roll out the dough on a floured surface and fit it into a 9-inch springform pan or tart pan.

Pour the onion mixture into the prepared crust, spreading evenly.

Step 10

Grate 100g of cheese and sprinkle it over the top of the pie.

Bake in the preheated oven for 40-45 minutes, or until the filling is set and the crust is golden brown.
