  • 800 grams Sauerkraut
  • 2 pieces Smoked pork hocks
  • 200 grams Streaky bacon
  • 1 medium Onion
  • 2 pieces Bay leaves
  • 3 pieces Whole cloves
  • 5 pieces Juniper berries
  • 0.5 teaspoons Black peppercorns
  • 750 milliliters Water
  • 1 kilogram Potatoes (optional, for serving)
  • 50 grams Butter (optional, for mashed potatoes)
  • 100 milliliters Milk (optional, for mashed potatoes)
  • 1 teaspoon Salt

Directions

Step 1

Rinse the sauerkraut under cold running water for a few seconds to reduce its acidity. Squeeze out excess liquid and set aside.

Dice the streaky bacon into small cubes.

Peel and finely chop the onion.

In a large Dutch oven or heavy-bottomed pot, heat the diced bacon over medium heat until it becomes crispy and renders its fat, about 5-7 minutes.

Add the chopped onion to the pot and sauté in the bacon fat until soft and translucent, about 3-4 minutes.
