Ingredients

  • 1 pound Italian sausage
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 0.5 teaspoon Crushed red pepper flakes
  • 3 medium Russet potatoes, thinly sliced
  • 6 cups Chicken broth
  • 4 cups Kale, stems removed and chopped
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a large pot or Dutch oven over medium heat, add olive oil.

Step 2

Remove the casing from the Italian sausage and add the sausage to the pot. Cook until browned, breaking up into small pieces with a wooden spoon, about 5-7 minutes. Remove the sausage from the pot and set aside.

Step 3

In the same pot, add the diced onion and sauté until translucent, about 5 minutes.
