Ingredients

  • 1 pound Turkey sausage (lean, mild or spicy)
  • 4 medium Russet potatoes
  • 1 large Yellow onion
  • 4 pieces Garlic cloves
  • 6 cups Low-sodium chicken broth
  • 1 cup Fat-free half-and-half
  • 3 cups Kale (chopped with stems removed)
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Crushed red pepper flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Remove the turkey sausage from its casing (if necessary), and cook it in the pot until browned. Use a wooden spoon to break it into small crumbles.

Step 3

While the sausage cooks, dice the onion and mince the garlic cloves.

Step 4

Remove the browned sausage from the pot and set it aside on a plate lined with paper towels to absorb excess grease.

Step 5

In the same pot, add the diced onion. Sauté for about 5 minutes until softened, then add the minced garlic and sauté for an additional 1 minute.

Thinly slice the potatoes (peeling them is optional) and add the slices to the pot.
