Ingredients

  • 2 cups all-purpose flour
  • 0.3333333333333333 cup granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon kosher salt
  • 0.5 cup unsalted butter, cold and cubed
  • 0.6666666666666666 cup heavy cream
  • 1 teaspoon fresh orange zest
  • 0.5 cup dried currants (optional)
  • 2 tablespoons raw sugar for topping
  • 2 tablespoons heavy cream for brushing

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and kosher salt.

Step 3

Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

Stir in the orange zest and dried currants (if using).

Step 5

Create a well in the center of the mixture and pour in the heavy cream. Gently fold the cream into the dry ingredients just until a rough dough forms. Be mindful not to overmix.

Step 6

Turn the dough out onto a lightly floured surface and gently pat it into a circle about 1 inch thick. Use a sharp knife or bench scraper to divide the circle into 8 equal wedges.

Step 7

Transfer the wedges to the prepared baking sheet, spacing them about 2 inches apart.

Step 8

Brush the tops of the scones with heavy cream and sprinkle generously with raw sugar for a golden crust.

Step 9

Bake in the preheated oven for 16-18 minutes, or until the scones are golden brown on top and set.

Step 10

Remove from the oven and allow the scones to cool slightly on the baking sheet before transferring to a wire rack. Serve warm or at room temperature.
