  • 0.5 teaspoon, or to taste black pepper
  • 2 teaspoons lemon juice
  • 2 tablespoons, chopped (for garnish) fresh parsley

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 5 minutes, or until softened.

Step 3

Stir in the minced garlic and sauté for another 1 minute, until fragrant.

Step 4

Add the chopped zucchini and diced potato to the pot, stirring to combine.

Pour in the vegetable broth and bring the mixture to a boil.

Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the zucchini and potato are tender.
