Ingredients

  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 2 small, finely minced garlic cloves
  • 2 tablespoons, chopped fresh basil leaves
  • 2 tablespoons, chopped fresh parsley
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon lemon zest
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash and pat dry the zucchini. Trim the ends, then slice the zucchini into 1/4-inch thick rounds.

Step 2

Heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for about 30 seconds, or until fragrant.

Step 4

Add the sliced zucchini to the skillet in an even layer. Cook for 3-4 minutes on one side without stirring, allowing the zucchini to develop a light golden color.

Step 5

Flip the zucchini slices using tongs or a spatula, and cook for an additional 3-4 minutes until tender but not mushy.

Step 6

Reduce the heat to low, and stir in the fresh basil, parsley, thyme, and lemon zest. Season with sea salt and black pepper, stirring gently to combine.

Step 7

Cook for 1 more minute to allow the herbs to release their aroma and flavor.

Step 8

Remove from heat and transfer the zucchini to a serving dish. Serve warm as a side dish or over grains for a light meal.
