Ingredients

  • 3 medium zucchini
  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil

  • 0.25 teaspoons red pepper flakes (optional)

Directions

Step 1

Wash and pat dry all vegetables. Slice the zucchini into thin rounds (about 1/4 inch thick). Halve the cherry tomatoes. Finely mince the garlic cloves.

Step 2

Heat the olive oil in a large skillet over medium heat.

Add the minced garlic to the skillet and sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.
