  • 4 medium-sized zucchini
  • 3 medium-sized roma tomatoes
  • 2 cups (shredded) mozzarella cheese

  • 0.25 cups (chopped) fresh basil
  • 1 teaspoon dried oregano
  • 0.5 cups breadcrumbs
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch casserole dish with a small amount of olive oil or non-stick spray.

Slice the zucchini and roma tomatoes into 1/4 inch thick rounds. Set them aside.
