  • 1 9-inch store-bought or homemade pie crust
  • 1 medium zucchini
  • 1 cup sweet corn kernels
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 0.25 cup Parmesan cheese
  • 4 large eggs
  • 0.5 cup whole milk
  • 0.5 cup heavy cream
  • 2 tablespoons fresh basil leaves (chopped)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Press the pie crust into a 9-inch tart or pie pan. Trim any excess edges, and prick the base with a fork. Blind bake the crust by lining it with parchment paper, filling it with pie weights or dried beans, and baking for 10 minutes. Remove the weights and parchment and bake an additional 5 minutes. Let cool slightly.

While the crust bakes, prepare the vegetables. Thinly slice the zucchini into half-moon shapes.
