  • 4 medium zucchini
  • 2 tablespoons olive oil

  • 2 cups shredded mozzarella cheese

  • 1 cup breadcrumbs
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoons paprika
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoons (or to taste) black pepper
  • 2 tablespoons (chopped, for garnish) fresh parsley
  • 2 tablespoons (melted) butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or cooking spray.

Step 2

Wash the zucchinis thoroughly, then slice them into 1/4-inch-thick rounds. Set aside.

Step 3

In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant. Remove from heat.
