Ingredients

  • 4 medium zucchini
  • 1 cup sour cream
  • 1.5 cups Monterey Jack cheese
  • 1 small yellow onion
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon Italian seasoning
  • 0.5 cups breadcrumbs
  • 1 tablespoon butter
  • 2 tablespoons parsley (optional, for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly grease a 9x9-inch or similar-sized baking dish.

Step 2

Slice the zucchinis into 1/4-inch thick rounds. Set aside.

Step 3

Dice the yellow onion and mince the garlic.

Step 4

Heat the olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant. Remove from heat.
