Ingredients

  • 3 medium zucchini
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 teaspoon lemon zest
  • 0.25 cup Parmigiano Reggiano
  • 2 tablespoons sliced almonds
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash and pat dry the zucchini, then slice them into thin rounds about 1/4 inch thick.

Mince the garlic and finely chop the parsley.

Heat a large, nonstick skillet over medium heat and add the olive oil.
