Directions

Wash the zucchinis thoroughly and trim off the ends. Grate them using a medium grater and squeeze out excess moisture by pressing them in a clean kitchen towel.

Heat the olive oil in a medium skillet over medium heat. Mince the garlic cloves and add them to the pan, sautéing until fragrant, about 1 minute.
