Ingredients

  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 15-ounce can Crushed tomatoes
  • 0.5 medium Onion
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.25 teaspoon Red pepper flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 0.25 cup Grated Parmesan (optional)

Directions

Step 1

Wash the zucchinis thoroughly and trim the ends. Using a vegetable peeler, shave the zucchini into thin ribbons. Set aside.

Step 2

Mince the garlic and finely chop the onion.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the onion and sauté for 2-3 minutes until soft and translucent.
