Ingredients

  • 2 large zucchini
  • 1 large lemon
  • 2 tablespoons extra virgin olive oil
  • 0.5 cup Parmesan cheese
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 10 fresh basil leaves
  • 2 tablespoons pine nuts

Directions

Step 1

Wash and dry the zucchinis. Using a vegetable peeler or a mandolin, slice the zucchinis into thin, long ribbons.

Place the zucchini ribbons in a large mixing bowl.
