  • 1 medium zucchini
  • 1 medium red bell pepper
  • 1 large leek
  • 8 large eggs

  • 2 tablespoons olive oil

  • 0.5 cups parmesan cheese
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Wash and prepare your vegetables: thinly slice the zucchini into rounds, dice the red bell pepper into small pieces, and clean and thinly slice the leek (white and light green parts only).
