Ingredients

  • 2 medium zucchini
  • 4 slices prosciutto
  • 150 grams cherry tomatoes
  • 4 large eggs
  • 50 ml whole milk
  • 50 grams grated Parmesan cheese
  • 100 grams mozzarella cheese
  • 3 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 8 leaves fresh basil leaves

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line a 20x20 cm square baking dish with parchment paper.

Step 2

Wash and trim the ends off the zucchinis, then grate them coarsely. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture. Set aside.

Halve the cherry tomatoes and roughly tear the prosciutto into smaller pieces.

In a large mixing bowl, whisk together the eggs, milk, olive oil, salt, and black pepper until well combined.
