Ingredients

  • 1 medium Zucchini
  • 0.5 cup Black olives
  • 1 cup Cheddar cheese (shredded)
  • 1 cup Mozzarella cheese (shredded)
  • 4 large Flour tortillas
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder

Directions

Step 1

Wash the zucchini and grate it using a box grater. Squeeze out excess moisture by placing the grated zucchini in a clean kitchen towel and wringing it out over the sink.

Roughly chop the black olives into small pieces.

Step 3

In a mixing bowl, combine the grated zucchini, chopped olives, cheddar cheese, mozzarella cheese, salt, black pepper, and garlic powder. Mix well to combine.

Heat a large skillet over medium heat and brush it with a light layer of olive oil.

Place a flour tortilla in the skillet and evenly spread about 1/4 of the zucchini mixture over one half of the tortilla.

Fold the tortilla in half to cover the filling and press down gently with a spatula.
