Ingredients

  • 4 medium zucchini
  • 5 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon lemon zest
  • 0.5 teaspoon red chili flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons pine nuts, toasted

Directions

Step 1

Wash the zucchini thoroughly and slice them thinly using a mandoline or a knife to create uniform rounds or ribbons.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Working in batches, lightly sauté the zucchini slices for 1-2 minutes per side until just softened but still firm. Remove from the skillet and transfer to a large bowl.

Step 3

In a small bowl, whisk together the remaining olive oil, red wine vinegar, minced garlic, chopped parsley, chopped basil, lemon zest, red chili flakes, salt, and black pepper to create the marinade.

Step 4

Pour the marinade over the warm zucchini slices and gently toss to ensure all slices are evenly coated. Let the mixture sit at room temperature for at least 20 minutes to allow the flavors to meld.

Step 5

Sprinkle the toasted pine nuts over the zucchini salad just before serving.

Step 6

Serve the Zucchini Marinata at room temperature or chilled as a side dish or light appetizer.
