  • 1.5 teaspoons vanilla extract
  • 1.5 cups zucchini, shredded and patted dry
  • 1 tablespoons lime zest
  • 2 tablespoons lime juice, freshly squeezed
  • 0.5 cups chopped nuts (optional, e.g., walnuts or pecans)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

In a large bowl, whisk the eggs, granulated sugar, and brown sugar until well combined. Stir in the vegetable oil and vanilla extract.
