Ingredients

  • 1 pound ground beef or ground turkey
  • 2 medium zucchini
  • 4 large eggs
  • 1 small onion
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 2 tablespoons fresh parsley or cilantro (optional, for garnish)

Directions

Step 1

Wash and pat dry the zucchini. Trim the ends and grate them using a box grater or food processor. Set aside.

Step 2

Finely chop the onion and mince the garlic cloves.

Step 3

Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Step 4

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 5

Add the ground beef or turkey to the skillet. Break it apart with a spatula and cook until browned and fully cooked, about 6-8 minutes. Drain any excess fat if necessary.

Step 6

Season the meat with salt, black pepper, paprika, and dried oregano. Stir to combine.

Step 7

Add the grated zucchini to the skillet. Mix well and cook for 4-5 minutes until the zucchini softens and incorporates into the dish.

Step 8

Make four small wells in the mixture and crack one egg into each well. Cover the skillet with a lid and cook for 3-5 minutes, or until the egg whites are set but the yolks remain slightly runny (cook longer for fully set yolks).

Step 9

Remove the skillet from heat and garnish with chopped parsley or cilantro, if desired.

Step 10

Serve immediately on its own or with crusty bread, rice, or a side salad.
