  • 0.25 cup Pine nuts
  • 0.5 cup Plain yogurt
  • 1 tablespoon Lemon juice
  • 1 teaspoon Honey
  • 2 tablespoons Water
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Grate the zucchini using the large holes of a box grater and place it in a colander. Sprinkle with 1 teaspoon of salt, toss, and let sit for 10 minutes to draw out excess water.

Meanwhile, toast the pine nuts in a dry skillet over medium heat until golden, about 2-3 minutes. Remove from heat and let cool.
