Ingredients

  • 3 medium zucchini
  • 1 teaspoon salt
  • 0.5 cup all-purpose flour
  • 0.25 cup Parmesan cheese, grated
  • 2 large eggs
  • 2 cloves garlic, minced
  • 0.5 teaspoon black pepper
  • 4 tablespoons olive oil
  • 0.5 cup mayonnaise
  • 1 tablespoon lime juice
  • 0.5 teaspoon chili powder

Directions

Step 1

Grate the zucchinis using a box grater and place them in a large bowl.

Step 2

Sprinkle the grated zucchini with 1 teaspoon of salt and let it sit for 10 minutes. This will draw out excess moisture.

Step 3

After 10 minutes, transfer the zucchini to a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. Return the zucchini to the bowl.

Step 4

Add the flour, grated Parmesan, eggs, minced garlic, and black pepper to the bowl with the zucchini. Stir until well combined to form a batter.

Step 5

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 6

Scoop about 2 tablespoons of the batter into the skillet for each fritter, flattening each mound slightly with the back of a spoon or spatula.

Step 7

Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy. Transfer the cooked fritters to a plate lined with paper towels to drain excess oil. Repeat with the remaining batter, adding more olive oil as needed.

Step 8

In a small bowl, whisk together the mayonnaise, lime juice, and chili powder to make the chili lime mayo dipping sauce.

Step 9

Serve the zucchini fritters warm with the chili lime mayo on the side for dipping.
