Ingredients

  • 2 medium Zucchini
  • 6 large Eggs
  • 0.5 cup Parmesan cheese, grated
  • 0.25 cup Milk
  • 2 tablespoons Olive oil
  • 2 large Garlic cloves, minced
  • 2 tablespoons Fresh basil, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 small Onion, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Wash the zucchinis and trim the ends. Grate them using a box grater.

Step 3

Place the grated zucchini in a clean kitchen towel, squeeze out excess moisture, and set aside.

Step 4

In a large bowl, beat the eggs with milk until well combined. Stir in grated parmesan cheese, salt, and pepper.

Step 5

Heat olive oil in an ovenproof skillet over medium heat. Add chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.

Step 6

Stir in the grated zucchini and cook for another 5 minutes, stirring occasionally, until some of the moisture evaporates.

Step 7

Reduce the heat to low and pour the egg mixture over the vegetables in the skillet. Stir gently to distribute the zucchini evenly.

Sprinkle the chopped fresh basil over the top.

Cook undisturbed on the stovetop just until the edges are set, about 5 minutes.
