  • 2 medium zucchini
  • 1 teaspoon salt
  • 1 cup sweet corn kernels

  • 0.25 cup milk

Directions

Step 1

Grate the zucchini using a box grater. Place the grated zucchini in a bowl and sprinkle with 1 teaspoon of salt. Let it sit for 10 minutes to draw out excess moisture.

While the zucchini is resting, prepare the other ingredients. In a large bowl, combine the corn kernels, chopped coriander, finely diced onion, minced garlic, flour, baking powder, and ground cumin.

After 10 minutes, use a clean kitchen towel to squeeze the grated zucchini and remove as much liquid as possible. Add the drained zucchini to the large bowl with the corn mixture.
