Ingredients

  • 3 medium Zucchini
  • 150 grams Grana Padano cheese
  • 3 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 teaspoon Fresh thyme
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 50 grams Breadcrumbs

Directions

Step 1

Preheat your oven to 190°C (375°F). Lightly grease a baking dish with 1 tablespoon of olive oil.

Step 2

Wash the zucchini and slice them thinly into rounds about 2-3mm thick. Use a mandoline slicer for uniform slices if possible.

Step 3

Finely grate the Grana Padano cheese and set aside.

Step 4

Mince the garlic cloves and finely chop the parsley.

Step 5

In a small bowl, combine the breadcrumbs, half of the grated Grana Padano, minced garlic, thyme, parsley, salt, and black pepper. Mix well.

Step 6

Arrange a layer of zucchini slices on the bottom of the prepared baking dish, slightly overlapping each slice.

Step 7

Drizzle a small amount of olive oil over the zucchini layer and sprinkle a portion of the breadcrumb mixture evenly on top.

Repeat the layering process with zucchini, olive oil, and the breadcrumb mixture until you run out of zucchini slices, finishing the top layer with a generous sprinkle of the remaining Grana Padano cheese.
