Ingredients

  • 0.25 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 2 Large eggs
  • 0.5 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1 cup Grated zucchini
  • 1 cup Grated carrots
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

In a separate medium bowl, beat the eggs, then add the vegetable oil and vanilla extract. Mix until smooth.
