Ingredients

  • 2 cups Whole wheat flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoons Salt
  • 2 large Eggs
  • 0.5 cups Unsweetened applesauce
  • 0.5 cups Honey or maple syrup
  • 2 teaspoons Vanilla extract
  • 2 cups Shredded zucchini (excess moisture squeezed out)
  • 0.5 cups Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour an 8x4-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.

Step 3

In another bowl, beat the eggs, unsweetened applesauce, honey or maple syrup, and vanilla extract until well combined.
