  • 2 large Eggs
  • 1 cup Brown sugar, packed
  • 2 tablespoons Molasses
  • 0.5 cup Unsalted butter, melted and cooled
  • 1 teaspoon Vanilla extract
  • 2 cups Zucchini, grated (about 2 medium zucchinis)
  • 0.5 cup Chopped walnuts (optional)
  • 0.5 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

In a separate bowl, beat the eggs, brown sugar, and molasses until well combined.
