Ingredients

  • 1 lb ground beef
  • 2 medium zucchini
  • 1 small onion
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 cup tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp paprika
  • 0.5 tsp red pepper flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup parmesan cheese (optional)
  • 2 tbsp fresh parsley (for garnish, optional)

Directions

Step 1

Wash the zucchini thoroughly and slice them into half-moon shapes, about 1/4 inch thick. Set aside.

Step 2

Peel and finely dice the onion. Mince the garlic cloves.

Step 3

Heat a large skillet over medium heat and add the olive oil. Once warm, add the diced onion and garlic. Sauté for 2-3 minutes until the onion becomes translucent and fragrant.

Step 4

Add the ground beef to the skillet, breaking it apart with a spatula or wooden spoon. Cook for 6-8 minutes, stirring frequently, until the beef is browned and fully cooked. Drain any excess grease if necessary.

Step 5

Sprinkle in the oregano, basil, paprika, red pepper flakes, salt, and black pepper. Stir well to coat the beef evenly with the seasonings.

Step 6

Add the tomato sauce to the skillet, mixing it into the beef. Reduce the heat to low and let simmer for 2-3 minutes, allowing the flavors to meld together.

Step 7

Toss in the sliced zucchini and mix gently to combine. Cover the skillet with a lid and cook for 5-7 minutes until the zucchini becomes tender but not mushy. Stir occasionally.

Step 8

Taste and adjust the seasoning if needed. If desired, stir in the parmesan cheese to add a creamy and savory element.

Step 9

Serve the zucchini beef warm, garnished with freshly chopped parsley. This dish pairs wonderfully with rice, pasta, or crusty bread.
