Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 0.75 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 2 Eggs
  • 1 cup Bananas, mashed (about 2 medium bananas)
  • 0.75 cup Pumpkin puree
  • 1 cup Zucchini, grated and squeezed dry
  • 0.5 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Walnuts or pecans (optional), chopped

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.

Step 3

In a separate medium bowl, combine the granulated sugar, brown sugar, eggs, mashed bananas, pumpkin puree, grated zucchini, vegetable oil, and vanilla extract. Mix until well blended.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Be careful not to overmix as this can make the bread dense.

Step 5

If using, fold in the chopped walnuts or pecans for an extra crunch.

Step 6

Pour the batter into the prepared loaf pan, spreading it evenly.

Step 7

Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Once baked, remove from the oven and let the bread cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely before slicing.

Step 9

Serve and enjoy as-is or with a smear of butter for added indulgence.
