Ingredients

  • 3 medium zucchini
  • 6 slices bacon
  • 1 medium onion
  • 2 cloves garlic
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 0.33 cup parmesan cheese, grated
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Wash the zucchini and slice them into thin rounds, about 1/4 inch thick.

Step 2

Dice the bacon into small pieces.

Step 3

Peel and thinly slice the onion.

Step 4

Mince the garlic cloves.

Step 5

In a large skillet or sauté pan, cook the bacon pieces over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered bacon fat in the pan.

Step 6

Add the sliced onion to the pan with the bacon fat and sauté over medium heat for about 5 minutes, stirring occasionally, until softened and golden.

Step 7

Add the minced garlic to the onions and sauté for an additional 1 minute until fragrant.

Step 8

Push the onions and garlic to one side of the pan and add 1 tablespoon of olive oil if needed. Add the zucchini slices in a single layer as much as possible. Cook for 2-3 minutes per side, allowing them to soften slightly and develop a bit of color.

Step 9

Once the zucchini is cooked, mix everything in the pan together evenly (zucchini, onions, garlic). Season with salt and black pepper.

Step 10

Reduce the heat to low and pour in the heavy cream, stirring gently to coat the vegetables in the cream sauce. Allow it to simmer for 2-3 minutes until slightly thickened.

Step 11

Stir in the grated parmesan cheese and cooked bacon pieces. Cook for another minute until the cheese is melted and the ingredients are combined.

Step 12

Remove from heat and sprinkle the chopped fresh parsley on top for garnish. Adjust seasonings as needed.

Step 13

Serve warm as a delicious side dish.
