Ingredients

  • 250 grams pappardelle pasta
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 medium zucchini, thinly sliced into half-moons
  • 200 grams canned tuna in olive oil, drained and flaked
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 0.5 teaspoon red chili flakes
  • 2 tablespoons parsley, chopped

  • 0 as desired parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pappardelle pasta until al dente according to the package instructions. Reserve 1/2 cup of pasta cooking water, then drain and set aside.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and sauté for 1–2 minutes until fragrant, being careful not to let it burn.

Add the zucchini slices to the skillet and cook for 5–7 minutes, stirring occasionally, until they are tender and lightly golden.

Stir in the flaked tuna, lemon zest, lemon juice, and red chili flakes. Cook for 2–3 minutes until heated through.

Add the cooked pasta to the skillet along with the remaining tablespoon of olive oil. Toss everything together gently to combine.

If the mixture is too dry, add a splash of the reserved pasta water to create a silky sauce.
