  • 0.5 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 0.5 cup Breadcrumbs
  • 1 tablespoon Butter

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Thinly slice the zucchini and summer squash into 1/8-inch rounds. Use a mandoline for uniform slices if available.

Step 3

Heat 1 tablespoon of olive oil in a small skillet over medium heat. Finely mince the garlic and sauté it for 1-2 minutes until fragrant, being careful not to let it burn.

In a large mixing bowl, combine the sliced zucchini and summer squash, sautéed garlic, salt, black pepper, and fresh thyme leaves. Mix gently to coat the vegetables evenly.
