Ingredients

  • 2 medium zucchini
  • 200 grams halloumi cheese
  • 2 large eggs
  • 100 grams all-purpose flour
  • 3 stalks spring onions
  • 2 tablespoons fresh parsley
  • 2 small garlic cloves
  • 1 teaspoon ground black pepper
  • 3 tablespoons olive oil
  • 0.5 teaspoons salt

Directions

Step 1

Grate the zucchini using a box grater and place it in a colander. Sprinkle the grated zucchini with a pinch of salt and let it sit for 10 minutes to draw out excess water.

Step 2

While the zucchini is resting, grate the halloumi cheese and set it aside.

Step 3

Mince the garlic cloves and finely chop the spring onions and parsley.

Step 4

After 10 minutes, use a clean kitchen towel or your hands to squeeze the zucchini to remove as much liquid as possible. This step is crucial to prevent soggy fritters.

Step 5

In a large mixing bowl, combine the grated zucchini, halloumi cheese, minced garlic, spring onions, parsley, and ground black pepper.

Step 6

Crack the eggs into the mixture and stir until well combined.

Step 7

Gradually add the flour to the mixture, stirring until a thick but cohesive batter forms. Adjust with a little more flour if the mixture is too wet.

Step 8

Heat olive oil in a large skillet over medium heat.

Step 9

Scoop about 2 tablespoons of the batter for each fritter and carefully place it into the skillet. Flatten the fritters slightly with the back of a spoon for even cooking.

Step 10

Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy. Work in batches to avoid overcrowding the skillet.

Step 11

Transfer the cooked fritters to a plate lined with paper towels to absorb any excess oil.

Step 12

Serve hot with a dollop of yogurt or your favorite dipping sauce.
