Ingredients

  • 1 medium Zucchini
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 slices Multi-grain bread
  • 4 tablespoons Cream cheese
  • 1 tablespoon Fresh dill
  • 0.5 teaspoon Lemon zest
  • 1 cup Arugula leaves
  • 1 tablespoon Butter

Directions

Step 1

Wash the zucchini and slice it into thin rounds about 1/8-inch thick.

Step 2

In a medium skillet, heat olive oil over medium heat. Add the zucchini slices and season with salt and black pepper. Sauté for 3-4 minutes, or until the zucchini is tender and lightly golden. Remove from heat and set aside.

Step 3

In a small bowl, mix the cream cheese, fresh dill, and lemon zest until well combined.

Step 4

Spread a generous layer of the cream cheese mixture onto one side of each bread slice.

On two of the bread slices, layer arugula leaves and sautéed zucchini slices over the cream cheese layer.
