Ingredients

  • 4 medium zucchini
  • 200 ml extra-virgin olive oil
  • 60 ml white wine vinegar
  • 2 cloves garlic
  • 10 leaves fresh mint leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Wash and dry the zucchini, then slice them into evenly thick rounds about 1/4 inch (0.6 cm) thick.

Step 2

Heat the extra-virgin olive oil in a large skillet over medium heat. Once hot, add the zucchini slices in batches to avoid overcrowding. Fry them until golden brown on both sides, about 3-4 minutes per batch. Remove with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Mince the garlic cloves finely and tear the fresh mint leaves into small pieces.

Step 4

In a small bowl, mix the white wine vinegar, salt, and black pepper. Stir well to dissolve the salt.
