Ingredients

  • 12 ounces ziti pasta
  • 4 ounces pancetta, diced
  • 8 ounces cremini mushrooms, sliced
  • 1 cup frozen peas
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil, and cook the ziti pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta. Set aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes. Remove the pancetta from the skillet with a slotted spoon and set aside, leaving the rendered fat in the pan.

Step 3

Add the remaining tablespoon of olive oil and the butter to the skillet. Once the butter is melted, add the minced garlic and cook for 30 seconds until fragrant.

Add the sliced mushrooms to the skillet, season with 1/2 teaspoon of salt, and cook, stirring occasionally, until the mushrooms are golden and tender, about 7 minutes.
